A blend of Muscat Ottonel (60%), Yellow Muscat (35%) and Furmint (5%). The grapes were grown in a 40-year old vineyard with clay soil and tuff bedrock at an elevation 150M.
The crushed and de-stemmed grapes were left on skins for 24 hours, after which the juice was transferred to stainless steel tanks (1000L) for 8 months on fine lees. Bottled with minimum sulphur added. No filtering nor fining.
Rich muscatel with honeysuckle notes, it was bottled with a bit of residual sugar which enabled secondary fermentation in bottle and created very light sparkle and dried the taste profile. It has a bit of funk too.
Pairs deliciously with poultry meats or lighter pastas.
Residual sugar 3.9g/L (on bottling), acids 6.0g/L, alc. 13.0% vol., total sulphites total: 80mg/L, free sulphites 25mg/L.
