Viticulture: Organic (official certification from 2018 vintage)
Vineyards: The grapes for this wine come from three blocks of Gemischter Satz. Two are very old and located in the ‘Auflangen’ vineyard (hilly, sloped), not far from the old vineyard that produced his 2015 ‘Ruhe In Frieden’ wine. The third block is in the ‘Oberersatz’ vineyard, a slighly flatter parcel with vines ranging from 20 to 50 years old. All the parcels are on limestone and clay but with varying amounts
of topsoil and stones in the upper layer.
Vinification: The first batch (from Obererasatz) was direct pressed and fermented in steel then aged in 6 x 225L barrels (old). The Auflangen block was fermented on the skins for 1-2 days in steel before being
transferred to a 2,500L Austrian oak barrel (old). Finally, the
Welschrielsing was harvested separately and fermented on its skins in 500L harvest boxes for the entire time (2 weeks or so) and some went into a 500L barrel whilst the rest stayed in a steel tank. All the wine aged for 8 months, saw some occasional battonage, and was bottled
with a small sulphite addition. Unfined, unfiltered.
Total production = 7,000 bottles.
